0.3333 cup  low sodium teriyaki sauce
6 each  parsley sprigs
4 oz  lime wedges for decoration
0.3333 cup  Ketchup, low sodium
2 tbsp  cold water
2 tbsp  Peanut Butter, creamy
1 tsp  hot pepper sauce
0 1/4 tsp  ground ginger
1 1/2 lb  large raw shrimp
2 each  large yellow bell pepppers
8 oz  sugar snap peas
1 each  cooking spray
  1. Preheat broiler.
  2. Soak wood skewers in water for 20 minutes.
  3. In small saucepan, over medium heat, combine teriyaki sauce, ketchup, water or sherry, peanut butter, pepper sauce, and ginger. Bring to boil, uncovered, stirring constantly.
  4. Reduce heat to low and simmer 1 minute. Remove from heat and set aside.
  5. Peel and devein shrimp leaving tails intact. Set aside.
  6. Cut bell pepper lengthwise into 4 quarters, removing stems and seeds. Cut each quarter crosswise into 4 equal pieces.
  7. On skewers, thread 2 each of the shrimp, bell pepper pieces, and sugar snap peas.
  8. Lightly coat broiler pan with cooking spray. Place skewers on pan and brush with sauce.
  9. Broil skewers 4 inches from heat source 3 minutes. Turn and brush with sauce. Cook 3 additional minutes.
  10. Remove skewers from oven and move to serving plates. Garnish with parsley and lime wedges if desired.
