4 each  Sweet Potatoes, orange, fresh, medium, 5" x 2", FDA
0 1/4 cup  olive oil
1 each  cooking spray
1 pinch  salt
1 pinch  chopped parsley
Directions
  1. Preheat oven to 400 degrees F. Slice the sweet potatoes lengthwise into ½-inch-thick strips. Place in a bowl with olive oil and toss. Use nonstick cooking spray and coat on baking sheet.
  2. Arrange the potatoes on a baking sheet, and bake the potatoes for 15 to 20 minutes, or until it is golden brown on the bottom.
  3. Turn potatoes over, and bake for 15 to 20 minutes more, or until it is golden brown all over.
  4. Sprinkle with salt and parsley , if desired.
