1 1/2 cup  spinach tortellini
2 tbsp  olive oil
1 each  olive oil cooking spray
0 1/4 cup  chopped parsley
0 1/4 cup  grated carrots
0 1/4 cup  fresh chopped green onion
  1. Bring a large pot of water to a boil. Add the tortellini, and cook until tender, about 10 minutes.
  2. Heat oil in a sprayed nonstick frying pan. Add cooked tortellini and fry over medium heat for 1 to 2 minutes on each side, until golden brown.
  3. Remove to serving dish, and drizzle with parsley, carrots, and onions.
