Ingredients Directions
  1. Preheat the oven to 375 degrees and spray a 9-inch pie plate with butter-flavored cooking spray.
  2. Mix together the rice, 1/2 cup Cheddar cheese, and 1 egg in a large mixing bowl and spread into the pie plate.
  3. Mix the 3 remaining eggs, broccoli, mushrooms, onion, and lemon pepper in a mixing bowl and spread in the crust.
  4. Bake for 15 to 20 minutes.
  5. Remove from oven and sprinkle the remaining cheese over the top.
  6. Bake for 10 minutes, remove from oven, let set for 10 minutes, and then cut into 6 pieces.
