1 1/2 cup  Cottage Cheese, 1% fat
0 1/4 cup  shredded carrots
0 1/4 cup  fresh chopped celery
0 1/2 tsp  fresh chives
0 1/4 cup  lowfat plain yogurt
8 piece  Bread, whole grain, slice
2 tbsp  Mustard, horseradish
2 oz  fresh spinach leaves
1 each  small tomato
  1. Combine the cottage cheese, carrot, celery or green pepper, and chives in a medium bowl. Stir in the yogurt.
  2. Evenly spread the horseradish over the whole grain bread. Place the spinach leaves over four of the bread slices. Place the cottage cheese mixture over the spinach and place 1 tomato slice on top. Cover with the remaining bread slices.
