1 lb  Beef, top sirloin steak, raw
2 tbsp  peanut oil
3 each  medium garlic cloves
1 each  yellow onion
5 each  scallions
2 each  medium tomatoes
1 pinch  black pepper
0 1/2 tsp  hot red pepper flakes
1 each  large green bell peppers
1 each  medium red bell peppers
1 cup  low sodium vegetable broth
1 tbsp  light soy sauce
2 tbsp  cornstarch
0 1/4 cup  tap water
  1. In wok, heat oil over medium high. Add garlic and beef. Cook 3-4 minutes, stirring frequently.
  2. Add yellow onion and stir fry until meat is cooked thoroughly.
  3. Add scallions, tomatoes, black pepper, pepper flakes, green pepper, red pepper, vegetable broth, and soy sauce.
  4. Cook over medium until peppers are tender crisp, 5-6 minutes, stirring occassionally.
  5. In small cup, dissolve cornstarch in water. Add to wok.
  6. Cook 1-2 minutes, stirring frequently, until sauce has thickened.
