1 lb  tilapia fillets
0 1/2 cup  yellow cornmeal
4 tbsp  chopped pecans
1 tsp  paprika
1 1/2 tsp  powdered garlic
2 tsp  minced onion
0 1/2 tsp  black pepper
1 tsp  salt
3 tbsp  light mayonnaise
2 tbsp  100% apricot fruit spread
  1. Mix together cornmeal, crushed pecans, paprika, garlic powder, onion and salt and lightly toast in a skillet (toasting spices brings out their flavor).
  2. Mix together mayo and apricot preserves and smear on fish.
  3. Press spices completely into fish.
  4. Spray a skillet with cooking spray and heat until hot, then lower flame and continue to heat.
  5. Place fish on hot skillet and brown on one side.
  6. Carefully turn and brown other side as well (be careful when turning so fish doesn’t fall apart).
