  1. Place one tortilla in a pan coated with nonstick cooking spray, on low heat. Sprinkle tortilla with cheese.
  2. Top with the other flour tortilla, and cook for about 1 to 11/2 minutes on each side, turning with a spatula.
  3. Coat the pan again with nonstick cooking spray. Use a spatula to turn, continue cooking until the cheese is melted and tortillas are light brown.
  4. Make sure to watch carefully. Cut six wedges, and serve with taco sauce if desired.
