1 tbsp  vegetable oil
1 tbsp  fresh lime juice
1/2 tsp  ground cumin
1/2 tsp  chili powder
1/4 tsp  ground red pepper (cayenne)
1/2 tsp  salt
3 cup  dry roasted unsalted peanuts
  1. Preheat oven to 350°F.
  2. In medium mixing bowl, combine oil, lime juice, cumin, chili powder, cayenne pepper, and salt.
  3. Add peanuts. Mix well to coat.
  4. Spread peanuts in 13" x 9" x 2" baking pan.
  5. Bake for 25-30 minutes or until toasted, stirring occasionally.
  6. Cool mixture before serving.
