4 each  fresh plum tomatoes
1 each  red onion
1 tbsp  extra virgin olive oil
1 pinch  black pepper
1 pinch  kosher salt
4 each  large whole wheat pitas
2 cup  shredded mozzarella cheese
0 1/2 cup  fresh chopped arugula
  1. Preheat oven to 350°F.
  2. In mixing bowl, combine tomatoes, onion, olive oil, salt, and pepper. Cover, set aside for 15 minutes.
  3. Cut each pita into quarters. Place on baking sheet, top with cheese, bake for 10 minutes.
  4. Remove from oven, allow to cool 5 minutes.
  5. Top with tomato mixture and chopped arugula.
