2 tbsp  butter
1 each  yellow onion
8 cup  Greens, collard, chopped, fresh
1 cup  heavy whipping cream
1 pinch  ground nutmeg
1 pinch  salt
  1. In large skillet, melt butter over high heat until bubbly.
  2. Add onion, cook until carmelized around edges.
  3. Add chopped collard greens, cook until slightly wilted, about two minutes. Stir occassionally.
  4. Reduce heat to medium-low, add heavy cream and simmer for five to six minutes, until cream is reduced.
  5. Season with freshly grated nutmeg and sea salt to taste. Serve hot.
