0 1/2 lb  extra lean ground beef (5% fat)
1 cup  Apples, fresh, chopped
2 tbsp  Raisins, seedless
1 tbsp  fresh jalapeno chili peppers
0 1/2 tsp  salt
0 1/4 tsp  ground cumin
0.125 tsp  ground cinnamon
1 pinch  ground coriander
1 cup  no-salt tomato sauce
1 each  medium garlic cloves
4 each  Tortilla, flour
Directions
  1. Place the beef in a 1 quart microwave safe casserole dish, crumbled, and microwave on high for 3 minutes.
  2. Stir beef at the 1 1/2 minute mark and then return to microwave.
  3. Drain the beef on paper towels and wipe out the drippings from dish.
  4. Place the beef back in the casserole dish and mix in the apple, raisins, pepper, salt, cumin, cinnamon, coriander, tomato sauce, and garlic.
  5. Return dish to the microwave and put on high for 8 minutes. Stir mixture every 3 minutes.
  6. Lay tortillas out on work area and spoon the beef mixture evenly onto each one.
  7. Roll sides of tortillas over and place in a baking dish. Seal top with heavy-duty plastic wrap and vent.
  8. Place dish in microwave and cook on high for 1 minute.
