1 each  package baker's yeast
0 1/4 cup  cold water
1 tsp  sugar
2 tsp  olive oil
2 cup  white all purpose flour
1 cup  whole wheat flour
0 1/4 tsp  salt
0 3/4 cup  cold water
1 each  cooking spray
1 tbsp  white all purpose flour
6 oz  Chicken, ground, raw
0 3/4 tsp  fennel seed
0 1/4 tsp  salt
8 oz  fresh plum tomatoes
4 oz  fresh mushroom slices
1 1/2 tbsp  fresh oregano
0 3/4 cup  part skim shredded mozzarella
0 1/2 cup  Cheese, parmesan, fresh, grated
Directions
  1. Mix the yeast, warm water, and sugar in a cup and let stand for 5 minutes.
  2. Combine the yeast mixture in a food processor with the all-purpose flour, whole wheat flour, and salt.
  3. Run the processor for 30 seconds then pour the lukewarm water through the chute while it is running. Continue processing until the dough is soft.
  4. Knead the dough out on a work surface for about 2 minutes.
  5. Coat a large bowl in cooking spray, add the dough, and cover. Let the dough rise until doubled in size, about 45 minutes, in a warm place.
  6. Spread 1 tablespoon of all-purpose flour over a work space. Punch the dough down and knead on the floured surface 4 or 5 times.
  7. Roll dough into a 15 x 10-inch rectangle and place in a jellyroll pan coated with cooking spray.
  8. Allow dough to rise for another 30 minutes, covered, in a warm place.
  9. Cover dough in cooking spray and bake 10 minutes at 450 degrees F.
  10. Place a large nonstick skillet over medium-high heat and coat with cooking spray.
  11. When pan is hot, add the chicken, fennel seeds, and salt. Continue cooking until chicken is done.
  12. Spread the chopped tomato over the crust then add the chicken mixture.
  13. Arrange the mushroom slices on top and sprinkle on the oregano and cheeses.
  14. Bake pizza for 10 minutes at 450 degrees F.
