1 each  fresh pineapple
2 tbsp  cold water
3 tbsp  brown sugar
3 tbsp  orange extract
0 1/2 tsp  grated orange peel
0 1/4 cup  Blueberries, fresh
0 1/4 cup  Raspberries, fresh
  1. Peel and core pineapple. Slice into 12 1/4 inch thick slices.
  2. Mix water, extract, and sugar over low heat in a large nonstick skillet. Stir constantly until sugar dissolves.
  3. Bring mixture up to a boil adding the orange rind and pineapple slices.
  4. Reduce the heat, cover and let simmer for 10 minutes.
  5. Serve with syrup drizzled over 3 slices of pineapple. Top with 1 tablespoon each of raspberries and blueberries.
