6 each  Rolls, sourdough, hot & crusty
2 tbsp  grated Parmesan cheese
1 cup  crimini mushrooms
1 cup  fresh shiitake mushrooms
2 oz  fresh green onions
0.3333 cup  low fat unsalted chicken broth
1 tbsp  fresh thyme
2 each  medium garlic cloves
1 each  cooking spray
1 tbsp  white all purpose flour
1 cup  fat free milk
0 1/4 cup  liquid egg substitute
0 1/4 tsp  salt
0 1/4 tsp  black pepper
Directions
  1. Process one sourdough roll in a food processor until it turns into crumbs.
  2. Stir 2 tablespoons of the Parmesan cheese with 2 tablespoons of the breadcrumbs in a large bowl.
  3. Chop the remaining sourdough rolls into 1-inch cubes and add to the Parmesan and breadcrumb mixture.
  4. Slice the crimini mushrooms, shiitake mushrooms, and green onions. Chop the fresh thyme up finely and mince the garlic.
  5. Add the mushrooms, green onions, chicken broth, fresh thyme, and garlic to a large nonstick skillet.
  6. Bring this mixture to a boil over high heat, then reduce heat, cover, and let simmer for 5 minutes.
  7. After simmering covered, let mixture simmer uncovered for 5 minutes then remove from heat.
  8. Pour mushrooms over the bread mixture and stir gently.
  9. Coat a 1-quart baking dish with cooking spray and spoon in the mushroom and bread mixture.
  10. Stir the milk and flour together until even. Add the egg substitute, salt, and pepper and stir.
  11. Add the milk and flour mixture over the mushroom mix in the baking dish.
  12. Bake dish covered at 325 degrees F for 20 minutes. Bake for another 20 minutes uncovered or until set.
  13. Allow dish to stand for 5 minutes before serving.
