3 each  cinnamon sticks
10 each  whole allspice
20 each  whole cloves
3 lb  medium apples
2 cup  red wine
1 tsp  vanilla extract
1 1/2 cup  heavy whipping cream
1 pinch  ground cinnamon
  1. Place cinnamon sticks, allspice, and cloves in 100% cotton muslin bag or cheesecloth tied with string.
  2. Peel, core, and chop apples.
  3. In large saucepan, add spice sack, chopped apples, and red wine. Bring to boil.
  4. Cover and reduce heat to medium-low. Stew until apples become soft and fall apart at slightest pressure, about 1 hour.
  5. Stir in vanilla.
  6. Allow apples to cool to room temperature.
  7. In large bowl, whip cream with electric mixer at high speed until stiff peaks form.
  8. Remove spice sack. Place stewed apples in food processor, blender, or food mill, and blend until applesauce becomes smooth.
  9. Divide between serving dishes. Top with 2 tablespoons whipped cream and sprinkle with cinnamon.
