13 each  cinnamon sticks
0.125 tsp  cardamom pods
20 each  whole cloves
3 lb  medium apples
2 cup  red wine
1 tsp  vanilla extract
1 1/2 cup  heavy whipping cream
1 pinch  ground cinnamon
Directions
  1. Place one cinnamon stick, cardamom, and cloves in 100% cotton muslin bag or cheesecloth tied with a string.
  2. In large saucepan, add spice sack, chopped apples, and red wine.
  3. Stew apples, spices, and wine over low heat until they become soft and fall apart at slightest pressure.
  4. Stir in vanilla.
  5. Allow apples to cool to room temperature.
  6. In large bowl, whip cream with electric mixer at high speed until stiff peaks form.
  7. Remove spice sack. Place stewed apples in food processor, blender, or food mill, and blend until applesauce becomes smooth.
  8. Divide between serving dishes. Top with 1/4 cup whipped cream, sprinkle with cinnamon, and garnish with cinnamon stick.
