  1. Cut up the cauliflower into small pieces.
  2. Steam the cauliflower, garlic and sliced leek unitl completely tender, approximately 20 - 30 minutes.
  3. While still hot, puree the mixture along with the butter, salt, and pepper in a food processor until it resembles the consistency of mashed potatoes.
