1 each  medium tomatoes
1 oz  Tomatoes, crushed, fire roasted, canned
3 oz  red onion
2 oz  part skim shredded mozzarella
1 1/2 oz  fresh basil
2 tbsp  olive oil
0.125 tsp  salt
0.125 tsp  black pepper
6 oz  NoOodles
  1. Slice tomato (save juice) and red onion, and stack on serving plate.
  2. Top with sliced mozzarella and sprinkle with 1 ounce basil.
  3. In small bowl toss NoOodles, roasted tomatoes, remaining basil, cubed mozzarella and reserved juice from sliced tomato.
  4. Arrange NoOodles next to stacked tomato, onion, and cheese. Top with a pinch of salt and pepper, serve, and enjoy!
