0 1/4 cup  Rice, brown, long grain, dry
0 3/4 cup  cold water
1 tbsp  vegetable oil
0 1/4 cup  fresh chopped onion
0 1/4 cup  fresh chopped celery
1 cup  fresh cranberries
1 1/2 cup  fresh mushrooms
0 1/4 tsp  ground thyme
0 1/4 tsp  dried basil
  1. Cook the rice in the water until tender (about 1 hour).
  2. Saute the remaining ingredients, except for cranberries, in a skillet until vegetables are tender.
  3. Add the rice and cranberries and stir to blend. Use as a stuffing in one small turkey or chicken. Double recipe for a larger bird.
