2 tbsp  canola oil
2 lb  medium potatoes
6 oz  red onion
0 1/4 cup  white all purpose flour
1 tsp  salt
0 1/4 tsp  black pepper
2 each  eggs
0 1/2 cup  unsweetened applesauce
0 1/2 cup  sour cream
Directions
  1. Heat oven to 450ยบ F.
  2. Brush 2 baking sheets with 1 tablespoon of oil and set aside.
  3. Coarsely grate potatoes into large bowl. Add onion, flour, salt, pepper, eggs, and the remaining tablespoon of oil. Toss to mix well.
  4. Drop by tablespoonfuls onto baking sheets and press lightly to make patties.
  5. Bake 10 minutes or until golden brown on the bottom.
  6. Flip latkes and rotate the baking sheets. Bake another 5 minutes or until golden.
  7. Serve with applesauce and sour cream.
