  1. Drain artichoke hearts, reserving marinade. Set aside.
  2. Stir together artichoke marinade, hot pepper sauce, and black pepper.
  3. Place pork chops in a self-sealing bag, pour in marinade, seal bag and let stand 30 minutes, turning occasionally.
  4. Chop reserved artichoke hearts.
  5. Combine chopped artichoke hearts with drained tomatoes & chiles, red peppers, olives, basil, and lemon juice.
  6. Set aside to let flavors blend at room temperature 30 minutes to one hour.
  7. Prepare moderately hot fire in kettle-style grill.
  8. Drain pork chops, discarding marinade.
  9. Place pork chops directly over heat, lower grill hood and grill 8 minutes.
  10. Turn and grill 7 minutes more.
  11. Serve with artichoke relish.
