1 each  cooking spray
1.3333 cup  yellow cornmeal
1.3333 cup  white all purpose flour
4 tsp  low sodium baking powder
3 each  eggs
1 cup  evaporated skim milk
1 oz  honey
1 oz  reduced fat margarine (80%)
3 tsp  maple extract
  1. Pre-heat oven to 400 degrees F.
  2. Spray muffin cups with nonstick cooking spray.
  3. Mix together all the ingredients.
  4. Pour batter into muffin cups (about one-third full).
  5. Bake for 13 minutes.
