Benne Seed Wafers

Benne seed (a synonym for sesame seed) wafers are both sweet and savory. This sweet version uses brown sugar.

1 cup  sesame seeds
1 cup  packed brown sugar
4 tbsp  unsalted butter
1 each  eggs
0 1/2 cup  white all purpose flour
0 1/4 tsp  salt
0.125 tsp  low sodium baking powder
1 tsp  fresh lemon juice
0 1/2 tsp  vanilla extract
1 each  cooking spray
  1. Preheat oven to 325 degrees F. Spray 2 baking sheets with vegetable spray and set aside.
  2. In a heavy, medium-sized skillet, toast the sesame seeds over moderate heat until they are golden brown, watching to be sure they don't burn.
  3. Cream the brown sugar and butter together in a medium-sized bowl.
  4. Add the egg, flour, salt, and baking powder. Blend to form a soft dough. Stir in the toasted sesame seeds, lemon juice, and vanilla extract; mix well.
  5. Drop the dough onto 2 prepared baking sheets by the teaspoonful, leaving space between each for the cookies to spread.
  6. Bake cookies for 15 minutes, or until they are slightly brown at the edges. Let them cool briefly on the baking sheets, then transfer them to a rack to cool completely.
