4 each  boneless pork chops
4 each  fresh plum tomatoes
8 piece  Tomatoes, sun dried, oil pack, drained, piece
0 1/4 cup  fresh basil
0 1/4 tsp  ground cayenne (red pepper)
2 tbsp  dijon mustard
1 tbsp  honey
1 tsp  minced garlic
1 pinch  fresh basil
  1. In a medium bowl stir together plum tomatoes, sun-dried tomatoes, chopped basil, and cayenne; set aside. In a small bowl combine mustard, honey, and garlic. Rub mustard mixture over all surfaces of chops.
  2. Place chops on a kettle-style grill over medium-hot fire and grill for 3-4 minutes. Turn chops and grill for 3-4 minutes more or until chops are just done. Serve with tomato salsa. If desired, garnish with basil sprigs.
