2 lb  pork tenderloin
0.3333 cup  orange juice
2 tbsp  molasses
1 tbsp  fresh ginger root
1 tsp  ground coriander
1 each  fresh mango
1 oz  fresh mint
2 tbsp  dried cranberries
1 tbsp  seasoned rice vinegar
0 1/4 tsp  hot red pepper flakes
  1. In heavy-duty resealable plastic bag, combine pork, juice, molasses, ginger, and coriander. Then, seal bag and refrigerate for 4 to 24 hours. Remove pork from marinade and place in shallow roasting pan. Discard marinade.
  2. Roast pork in a 450 degrees F oven for 20 to 25 minutes, until internal temperature reads 155 degrees F. Remove pork from oven; let rest for 5 minutes before slicing to serve with Mint Mango Relish.
  3. Mint Mango Relish: In small bowl, stir together diced mango, mint, cranberries, rice vinegar, and crushed red pepper.
