2 cup  vegetable oil
1 cup  Cornmeal, white, degerminated, enriched
1 1/2 tsp  white all purpose flour
0 1/2 tsp  low sodium baking powder
1 tsp  sugar
0 3/4 tsp  salt
0 1/2 cup  low fat buttermilk
1 each  eggs
0 1/2 each  small onions
  1. In a deep-fat fryer, heat oil to 375 degrees F.
  2. Sift together dry ingredients into a medium bowl; in a small bowl stir together buttermilk, egg, and onion.
  3. Stir wet ingredients into dry; stirring to mix well but do not overbeat. Drop one tablespoon at a time into the hot oil.
  4. In about three minutes, the hush puppies will turn golden brown and float to the top. Remove from oil with a slotted spoon and drain on paper towels. Serve warm. Makes about 12 hush puppies.
