1 each  Papaya, fresh
2 cup  chopped bok choy
1 cup  shredded carrots
1 each  medium red bell peppers
0.3333 cup  fresh chopped red onion
2 tbsp  fresh cilantro
1 tbsp  fresh mint

0 1/4 cup  rice vinegar
0 1/4 cup  honey
2 tbsp  Oil, eggplant seed, INTL
2 tsp  fresh ginger root
  1. In medium bowl, combine all ingredients except dressing; set aside. In small bowl, combine dressing ingredients; pour over vegetable mixture.
  2. Stir to combine; set aside for at least 15 minutes to allow flavors to develop.
