1 each  Cucumber, with o skin, fresh, large, 8 1/4" long
0 1/2 each  red onion
0 1/2 each  medium red bell peppers
2 tbsp  sugar
0 1/4 cup  rice vinegar
1 tsp  salt
0 1/2 tsp  hot red pepper flakes
0 1/4 cup  fresh cilantro
Directions
  1. In medium shallow serving bowl, toss cucumber slices with onion slices and diced red bell pepper. In a small bowl, combine remaining ingredients and mix well.
  2. Drizzle salad with a dressing. Let stand at room temperature, up to 2 hours, until ready to serve.
