2 each  medium potatoes
2 tsp  olive oil
2 tbsp  grated Parmesan cheese
1 pinch  black pepper
  1. Halve potatoes lengthwise; brush surfaces with oil.
  2. Coat with cheese.
  3. Place in microwave baking dish. Microwave on high power 5 to 7 minutes.
  4. Transfer onto broiler pan or cookie sheet. Brown under broiler for 1-3 minutes until crispy.
  5. Sprinkle with pepper before serving.
