4 cup  romaine lettuce
2 each  large tomato
1 cup  canned pinto beans
1 each  Squash, chayote, fresh, 5 3/4"
3 each  scallions
0 1/2 cup  frozen sweet corn kernels
1 cup  salsa
0 1/2 cup  sour cream
2 tsp  fresh lime juice
0 1/2 tsp  ground cumin
  1. Chop lettuce, tomatoes, chayote, and scallions.
  2. Drain and rinse pinto beans.
  3. In small bowl, mix salsa, sour cream, lime juice and cumin. Spoon over layered salad.
  4. Layer lettuce, tomatoes, beans, chayote, scallions, and corn in a large glass casserole or a straight sided salad bowl.
