Ingredients Directions
  1. Heat oil over medium heat in a large saucepan adding celery, onion, and green pepper. Cook for 3 minutes. Add garlic and cook for 30 seconds. Add chili powder and cumin. Cook for 20 more seconds.
  2. Pour in broth, beans, and tomatoes. Bring to a simmer. Grate the sweet potato into chili. Reduce to low heat and let simmer covered for 40 minutes. Stir in salt 5 minutes before serving.
