1 each  Cauliflower, head, medium, 5" - 6", fresh
1 tbsp  olive oil
0 1/2 tsp  salt
0 1/4 tsp  black pepper
2 tbsp  chopped parsley
1 each  medium garlic cloves
  1. Preheat oven to 450 degrees F.
  2. Place the cauliflower, oil, salt, and pepper in a jelly roll pan and mix to coat evenly. Place in oven for 20 minutes, stirring once after 10 minutes.
  3. In the meantime, mix the parsley and garlic in a small bowl. After cauliflower has been in oven for 20 minutes stir in the parsley mixture and roast another 3 minutes.
