10 oz  frozen sweet corn kernels
2 tbsp  fresh lime juice
2 tbsp  fresh cilantro
1 tbsp  olive oil
0 1/4 tsp  salt
1 each  medium red bell peppers
1 each  fresh green onions
  1. Bring 2 inches of water to a boil in a small pot over high heat. Add in corn and bring to a second boil. Continue boiling for 30 seconds.
  2. Place in strainer to drain. Run under cold water and drain well.
  3. In a medium bowl add the lime juice, cilantro, oil, and salt, whisk until well blended.
  4. Add in the corn, red pepper, and green onion, mix to coat well and serve.
