2 tbsp  unsalted butter
0 1/4 cup  shallots, chopped
8 oz  button mushrooms
4 oz  fresh shiitake mushrooms
4 oz  Mushrooms, oyster, fresh, small
0 1/4 tsp  salt
0.125 tsp  black pepper
0.125 tsp  ground thyme
1 each  medium garlic cloves
1 tbsp  chopped parsley
  1. Melt butter over medium high heat in a large skillet. Add shallots and cook for 1 minute.
  2. Stir in all of the mushrooms, salt, pepper, and thyme. Sauté until mushrooms are tender and liquid has evaporated, about 8 minutes.
  3. Stir in garlic and parsley; cook for another minute and serve.
