1 tbsp  olive oil
1 each  medium garlic cloves
1 lb  chopped escarole
0 1/4 cup  golden raisins
0 1/4 tsp  salt
1 oz  pine nuts
  1. Preheat oven or toaster oven to 350°F.
  2. Spread pine nuts on small baking sheet.
  3. Bake pine nuts for 2-3 minutes or until golden brown. Check every minute. Set aside.
  4. In 5 quart Dutch oven, heat oil over medium.
  5. Add garlic and cook about 30 seconds, or until golden brown.
  6. Stir in escarole, raisins, and salt.
  7. Cover and cook for 5 minutes.
  8. Remove cover and cook an additional 10 minutes. Escarole should be tender and excess juice should be evaporated.
  9. Stir in toasted pine nuts and serve.
