1 1/2 lb  Onion, sweet, fresh
2 each  medium garlic cloves
1 tsp  sugar
6 cup  low sodium vegetable broth
2 each  bay leaves
1 pinch  salt
1 pinch  white pepper
8 piece  Bread, French, small slice
8 tbsp  Cheese, mozzarella, fat free, shredded
Directions
  1. Add onions and garlic to lightly greased Dutch oven and cook, covered, over medium low heat until wilted, 8 to 10 minutes.
  2. Stir in sugar and continue cooking, uncovered, until onions are lightly browned.
  3. Stir in broth and bay leaves, heat to boiling.
  4. Reduce heat and simmer, covered, 30 minutes.
  5. Discard bay leaves, season to taste with salt and white pepper.
  6. Top each bread slice (if using) with 1 tablespoon cheese, broil 6 inches from heat source until cheese is melted.
  7. Top each bowl of soup with a Bruschetta.
