1 cup  fresh chopped onion
3 each  medium garlic cloves
2 lb  Broccoli, fresh
0 1/2 tsp  ground thyme
0.125 tsp  ground nutmeg
3 1/2 cup  low sodium vegetable broth
0 1/2 cup  fat free half and half
1 pinch  salt
1 pinch  white pepper
6 tbsp  fat free sour cream
1 1/2 cup  plain croutons
  1. In a lightly greased saucepan, saute onions and garlic until tender, 3 to 5 minutes.
  2. Stir in broccoli, thyme, and nutmeg. Cook 2 minutes longer.
  3. Add stock to saucepan and heat to boiling, reduce heat and simmer, covered, until broccoli is tender, about 10 minutes.
  4. Stir in half and half.
  5. Using a food processor or blender, process soup until smooth, season to taste with salt and white pepper.
  6. Stir 1 tablespoon sour cream into each bowl of soup, sprinkle with croutons.
  7. Serve warm or chilled.
