2 cup  Stuffing, cube, dry mix
0 1/4 cup  reduced fat grated parmesan cheese
0 1/4 cup  fresh chopped green onion
2 each  medium garlic cloves
0.125 tsp  ground nutmeg
10 oz  Spinach, frozen
0 1/4 cup  low sodium vegetable broth
2 tbsp  margarine
1 pinch  salt and pepper
2 each  egg whites
0 3/4 cup  fat free sour cream
3 tsp  dijon mustard
1 tbsp  fresh chives
1 1/2 tbsp  honey
Directions
  1. In a medium size bowl, combine stuffing cubes, Parmesan cheese, onions, garlic, and nutmeg. Mix in spinach, broth, and margarine; season to taste with salt and pepper. Mix in egg whites.
  2. Shape mixture into 24 balls. Bake at 350 degrees F on greased jelly roll pan until spinach balls are browned, about 15 minutes. Serve with Mustard Sauce (sour cream, honey, chopped chives, and dijon mustard).
