1 1/4 cup  Cottage Cheese, fat free
0 1/4 cup  reduced fat grated parmesan cheese
2 tbsp  fat free milk
2 tbsp  Flour, all purpose, bleached, enriched
0 1/2 cup  fresh chopped spinach
0 1/2 tsp  oregano leaves
1 pinch  white pepper
1 pinch  salt
2 each  eggs
16 oz  mini phyllo tart shells
Directions
  1. Mix cheeses, flour, spinach, oregano, and thyme. Season to taste with salt and pepper. Stir in eggs. Spoon mixture into phyllo shells on cookie sheet or in mini-muffin tins.
  2. Bake at 325 degrees F until puffed and beginning to brown on the tops, about 20 minutes.
