36 each  button mushrooms
0 1/2 cup  fresh chopped onion
5 oz  fresh baby spinach
3 oz  cream cheese
0.125 tsp  ground nutmeg
1 pinch  salt and pepper
  1. Preheat oven to 425°F.
  2. Remove stems from mushrooms and chop finely.
  3. In small skillet lightly greased, sauté mushroom stems and onion until softened, about 5 minutes.
  4. Add spinach and stir until wilted, 1 to 2 minutes. Let cool, then mix in cheese and nutmeg. Season to taste with salt and pepper.
  5. Place mushroom caps in baking pan and fill with cheese mixture. Bake uncovered until hot through, 5 to 8 minutes.
