1 1/2 lb  fresh leeks
1 tbsp  Butter, unsalted
0.125 tsp  salt
0 1/4 cup  cold water
  1. Cut off the roots and dark green tops from leeks. Cut each in half lengthwise first then crosswise into 1/2 inch thick slices. Place into a large bowl of cold water to remove sand. Remove leeks by hand into a strainer to drain while leaving the sand at the bottom of the bowl. Rinse under cold water and let drain.
  2. Place all of the ingredients, including the leeks, into a large pot over high heat and bring to a boil. Lower heat, cover, and simmer until tender, about 5 minutes. Remove cover and let cook another 5 minutes so that all of the liquid has evaporated.
