1 tbsp  Butter, unsalted
2 tbsp  shallots, chopped
2 each  medium garlic cloves
0 1/2 cup  white wine
2 tbsp  capers
3 lb  mussels
0 1/2 cup  chopped parsley
  1. Melt butter in a large pot over medium high heat. Stir in the shallots and garlic and cook for 2 minutes, stir often.
  2. Stir in wine and capers and bring to a boil. Continue boiling for 2 minutes.
  3. Add in mussels, lower heat, cover, and simmer until shells are open, about 10 minutes.
  4. Do not serve mussels that have not opened, those should be thrown out. Place opened mussels into a serving bowl, sprinkle with parsley, and serve.
