3 tbsp  Margarine, 80% fat, unsalted
1 lb  sugar snap peas
3 each  scallions
1 oz  fresh mint
0 1/2 tsp  salt
0 1/4 tsp  black pepper
Directions
  1. In a skillet over medium heat, melt the margarine. Stir in the peas and scallions. Cover and cook until the peas are bright green and crisp, tender about 1 to 2 minutes
  2. Stir in the mint, salt, and pepper. Serve warm.
