1 tbsp  Margarine, 80% fat, unsalted
1 each  Onion, sweet, fresh
2 lb  Squash, summer, fresh, medium, FDA
0 3/4 tsp  salt
0 1/2 tsp  white pepper
2 tbsp  fresh oregano
  1. In a large deep skillet over medium heat melt the margarine.
  2. Add the onion and cook until tender, about 5 minutes.
  3. Stir in the squash, salt, and pepper. Cook until the squash is tender, about 5 minutes more. Stir in the oregano and/or basil.
