1 lb  tilapia fillets
1 1/2 tbsp  cajun seasoning
1 tsp  ground thyme
1 tsp  paprika
0 1/2 tsp  black pepper
0 1/4 tsp  ground red pepper (cayenne)
1 each  cooking spray
1 tbsp  canola oil
1 each  medium lemons
  1. Rinse the fish in cold water and pat dry.
  2. Lightly sprinkle the fish with the blackening seasoning, thyme, paprika, black pepper, and ground red pepper, patting it in on both sides.
  3. Coat a large cast-iron skillet (or other heavy-bottomed skillet) with cooking spray.
  4. Add the oil and heat over medium-high heat until smoking hot.
  5. Put the fish in the pan and cook, turning once, until just opaque throughout, about 2 minutes per side.
  6. Serve with the lemon wedges for squeezing.
