0 1/2 lb  raw bacon slices
2 tbsp  cider vinegar
3 tbsp  light honey
0 1/4 tsp  dry mustard
0 1/2 tsp  celery seeds, ground
0 1/4 cup  extra virgin olive oil
0 1/2 tsp  ground paprika
1 each  Lettuce, red leaf, fresh, head
2 cup  Mandarin Oranges, fresh, sections
0 3/4 cup  slivered almonds
0 1/2 cup  fresh chopped green onion
  1. Cook bacon slices in skillet over medium-high heat until browned and crisp. Turn occasionally to brown evenly. Drain skillet, cool, and break into small pieces.
  2. Blend together vinegar, honey, mustard, celery seeds, olive oil, and paprika.
  3. Add shredded lettuce, oranges, onion, almonds, and bacon to a large bowl. Gently toss with vinegar mixture and serve.
