1 tbsp  fresh lemon peel
3 tbsp  fresh lemon juice
1 tbsp  olive oil
0 1/2 tsp  salt
0 1/4 tsp  black pepper
4 each  chicken thighs
4 cup  sliced summer squash
0 1/4 cup  fresh chives
  1. In medium bowl, whisk lemon peel, lemon juice, oil, salt, and pepper until well blended. Remove 2 tablespoons of mix and place in a small cup. Set aside.
  2. Place thighs in bowl with lemon mixture and toss well to coat. Cover and refrigerate 30 minutes.
  3. Preheat grill to medium.
  4. Remove chicken from marinade and place on heated grill. Add squash to grill skin side down. Discard remaining marinade.
  5. Grill until chicken is thoroughly cooked and squash is tender, about 10-12 minutes. Turn chicken and squash once to brown evenly on both sides.
  6. Remove pieces to cutting board when they are cooked.
  7. Cut chicken into 1 inch wide strips and slice each piece of squash in half crosswise.
  8. In large bowl, gently toss chicken, squash, and chives with reserved 2 tablespoons of lemon marinade. Serve.
