3 tbsp  distilled white vinegar
6 cup  cold water
1 tsp  black peppercorns
4 each  fresh artichokes
4 oz  silken tofu
2 tbsp  fresh lemon juice
1/4 cup  lowfat plain yogurt
2 tsp  extra virgin olive oil
0 1/2 tsp  dry mustard
1 pinch  salt
1 pinch  black pepper
  1. Fill large pot halfway with water. Add vinegar and peppercorns. Bring to boil.
  2. Slice off bottom stem of artichokes and remove leaves. Cut off 1/2 inch from top of artichokes and 1/4 of each leaf tip.
  3. Place artichokes in water, cover pot, reduce heat and simmer 40-45 minutes.
  4. In food processor, fitted with steel blade, blend tofu, yogurt, lemon juice, oil, mustard, salt, and pepper until smooth.
  5. Arrange artichokes on plate and serve with dipping sauce.
