1 floz  canned artichokes hearts, drained
1 tbsp  olive oil
1 tbsp  cold water
1 tbsp  fresh lemon juice
0 1/2 tsp  dried basil
0 1/4 tsp  ground oregano
0 1/4 tsp  black pepper
1 each  medium garlic cloves
5 oz  pasta shells
2 cup  fresh chopped spinach
1 each  medium tomatoes
0 1/4 cup  crumbled feta cheese
  1. Using a food processor or blender, puree 2 artichoke hearts, oil, water, lemon juice, basil, oregano, pepper, and garlic until smooth.
  2. Coarsely chop the other artichoke hearts and mix with pasta, spinach, and tomato. Toss mixture with pureed artichoke mixture.
  3. Cover mixture and place in refrigerator for at least 2 hours. Top with feta cheese.
