1 tbsp  olive oil
1 cup  fresh chopped onion
1 cup  fresh chopped celery
8 oz  fennel bulb
2 each  medium garlic cloves
0 1/2 cup  golden raisins
0.3333 cup  white wine vinegar
3 tbsp  sugar
2 tbsp  capers
1 1/2 tsp  fresh lemon peel
0 1/4 tsp  salt
0 1/4 tsp  black pepper
15 floz  no-salt tomato sauce
9 oz  frozen artichokes hearts
2 tbsp  chopped parsley
  1. Pour oil in a frying pan and heat over medium-high heat. Saute onion, celery, fennel, and garlic 5 minutes or until light browned. Mix in raisins, vinegar, sugar, capers, lemon rind, salt, pepper, tomato sauce, and artichokes. Let mixture simmer then cook over medium-low heat for 5 minutes or until most of the liquid absorbs. Garnish with fresh parsley.
